Tip the lightly sautéed vegetables into the crockpot and cover them with a good quality vegetable stock. If your meal is going to include pulses then add them to the pot. Turn the crockpot on and leave the dish to cook. Vegetarian crock pot meals cook far quicker than meaty casseroles. Once it comes to boil turn the heat down and let the contents simmer. Leave the meal simmering until the vegetables and pulses are soft.

Vegetarian crock pot meals smell delicious. Once the contents have cooked through then the meal will need to be seasoned to taste. Add the finely chopped herbs about a half an hour before you thicken the meal, this means that you enjoy the full flavor of the pungent herbs. Your veggie crockpot meal will look appetizing but you can add a small amount of tomato purée for extra flavor and color. The starch in the sliced potatoes thickens the stock but it may need a little more thickening. Use a small amount of plain flour and mix this with a little cold water.
